BADAM KHEER / ALMOND KHEER



                  Badam Kheer is a very simple, creamy and delicious Indian dessert made of almonds. This is one of my favorite desert often i use to drink in restaurants. Try this yummy recipe and serve for your kids as an evening drink.

Ingredients:
  • Boiled milk - 6 cups
  • Badam- 50 grams
  • Cashew - 25 grams
  • Saffron - 1 pinch
  • Sugar - 150 grams
  • Cardamom Powder - 2 pinch
  • Chironji ( Saara parupu ) - 10 grams (optional)
Method:
  • Soak almonds and cashew nuts in warm water for 15min.
  • Keep it aside and peel out the skin of almonds.
  • After that grind the almonds with little milk along with cashew nuts into a coarse paste.
  • Take a 4 1/2 cups of milk simmer it ,till it reduces to 2 1/2 cups
  • Mix this ground paste with other 1 1/2 cups of milk and let them cook until the raw flavour goes.
  • Altast , mix both the milk together , add cardamom powder , saffron soaked with hot milk ,sugar and simmer till sugar dissolves.(add sugar in the last else it may curdle).Remove from flame.
  • Badam kheer is ready to serve. you can serve it either hot or cold.
  • It gives delicious and awesome taste when it is cold.

Vella seeda / Sweet seeda

VELLA SEEDA / SWEET SEEDA



                   Vella seeda is an traditional snack which i always used to prepare for krishna jayanthi. I have already posted uppu seeda version. This vella seeda will be very cruchy and delicious recipe.

Ingredients:
  • Raw Rice Flour - 1 cup
  • Urad dal Flour - 1 tsp
  • Jaggery - 1/2 cup (Grated)
  • Cardamom powder - 1/2 tsp
  • Ghee - 1 tsp
  • White Seseme seeds - 1/2 tsp
  • Oil - for Deep Frying.
  • Fresh grated cocunut - 1 tbsp (optional).

How to make Rice & Urad dal Flour :
  • Soak the raw rice in water for for 3 to 4 hrs, drain the water completely and spread it in a cloth to dry. then grind it in a mixer into fine powder.
  • sieve it and keep aside.
  • Then roast the rice flour till it becomes hot to touch. Should not roast the flour for long time until color changes.Nearly ,it will take minimum 2 mins to roast the flour.
  • Dry roast ural dal till it becomes golden brown. Then grind it in a mixer to fine powder and sieve it and keep aside.
Method:
  • Take a jaggery in a pan, add just enough water to cover the jaggery and keep it in a low flame.
  • Once the jaggery dissolves remove from flame and filter it to remove impurities.
  • In a bowl, add raw rice flour, urad dal flour, ghee, cardamom powder, jaggery water, white seseme seeds and mix it well.
  • Sprinkle some water and make it into smooth dough. Let the dough rest for 10mins. 
  • Then, make medium size balls. all the ball should be in same size balls. If the balls are too big , the seeda will not get cooked inside. So, make medium sized balls as shown below.
  • Let the balls dry for 15 mins.(to avoid busting)
  • Heat the oil in kadai , then fry the seeda in low flame, should not fry in high flame.
  • Do not stir too frequently as the seeda wil break,when they turn golden brown after that bubble sound stops(like below image) then, take the seeda from the oil using laddle and absorbs the oil in tissue papper. 
  • Serve the crispy vella seeda and store it in a airtight container.

Tips:
  • Do not Fry the balls wet.
  • Fry in a low flame.take care while deep frying.

Sura meen / Shark Fish Puttu


SURA MEEN / SHARK FISH PUTTU



                    Fish puttu is very delicious traditional recipe of south india and  has an awesome flavour,. This recipe is very easy to prepare and serves as a good side dish. It is  less spicy , aromatic and very delicious. so try this yummy shark puttu recipe and enjoy tasting this recipe.

Ingredients:
  • Paal Sura/White Shark Fish - 250g
  • Onion Chopped - 3-4 Medium sized
  • Green chillies - 4
  • Ginger - 1 inch (Chopped)
  • Garlic - 8 to 10 cloves
  • Turmeric Powder - 1/2 tsp
  • Chilly Powder - 1/2 tsp
  • Curry Leaves - few
  • coriandar Leaves - few
  • Salt - As needed.
  • Oil - 1 tbsp
  • Mustard seeds - 1/2 tsp.
  • Urad dal - 1/2 tsp
Method:
  • Cook the shark in a vessel with turmeric powder and poured with enough water. Cook until water boils well for 10 mins.
  • After that remove fish from the hot water and slightly squeeze out the excess water. Mince the fish added with turmeric powder, chilly powder and keep aside.
  • Heat oil in pan, add the mustard seeds, urad dal , ginger, garlic, green chillies, curry leaves and suate it for 2min.
  • Then, add the minced shark fish, salt and suate it for another 5 to 7 min.remove from the flame.
  • Garnish it with coriander leaves and serve hot as side dish.
