Ellu Kozhukatai / Mothagam recipe



                       This mothagam recipe is very important for vinayagar chaturthi festival. Every year i used to help my mom to make mothagam shape. I have learnt this recipe from my mom. she used to cook very soft kozhukatai. If u follow the below methods correctly. i'm damn sure that you will get soft kozhukatai. Celebrate vinayagar chathurthi with your family  and fullfilled with lots of happiness.

How to prepare kozhukatai using sesame seeds stuffing

Ingredients:
Roasted Sesame seeds

Grated jaggery

Rice Flour









Stuffing:
  • Roasted sesame seeds - 1 cup
  • Grated jaggery - 3/4 cup
  • Cardamom poweder - 2 pinch
Kozhukatai outer cover:
  • Rice flour / Idiyaapam Flour - 1 cup
  • Water - 11/4 cup
  • Salt - 1 pinch
  • Sesame seed oil - 1 tsp 
How to make Rice Flour :
  • Soak the raw rice in water for for 1 to 2 hrs, drain the water completely and spread it in a cloth to dry. then grind it in a mixer into fine powder.
  • sieve it and keep aside.
  • Pour the rice flour in a white cloth and steam the rice flour in idli maker for 10 mins. Then transfer the flour in an plate and allow it to cool. for best results ,soft kozhukatai try the above making rice flour instead of using idiyapam flour.
  • Fresh flour gives very soft tough to kozhukatai and avoid bursting while steaming.

Method:
  • Dry roast the sesame seeds and when it is cool ,grind this along with jageery and keep aside
  • Add cardamom podwer mix it well and keep aside.
  • Add 1 tsp of oil and a pinch of salt in 1 1/4 cup of boiling water.
  • Then pour the boiling water in rice flour and mix it well with the back of the laddle.When it is warm grease your hands with oil and make it to a smooth dough.
  • Divide the dough into equal parts. Cover the balls else it will get dry.
  • Take one of the ball and by using your fingers make it like a cup. place one spoon of ellu stuffing and close it like a mothagam shape or refer below image.

  • Repeat this for rest of dough.
  • Steam this stuffed kozhukati in idli maker for 10mins.

Chicken Drumsticks




               Chicken drumsticks is one of the most popular dish in all the restuarants. Chicken leg pieces with hot biriyani,raita is one of the best combination. One of my favorite too.It has a unique taste and finger licking dish. It is very spicy , red in color, crispy etc. Holding the bone and having the byte with chicken will awesome. Try this and taste it in home as a restuarant style.

Ingredients:
  • Chicken leg pieces - 4 to 6 pieces
  • Onion Paste - 1 tbsp
  • Red Chilli Powder - 2 tbsp
  • Green chilli paste - 2tsp
  • Tumeric Powder - 1/4 tsp
  • Pepper Powder - 1 tbsp
  • Garam masala Powder - 1/2 tbsp
  • Corn flour Powder - 1 tbsp
  • Ginger-garlic paste or juice - 2 tsp
  • Curd - 2 tbsp
  • Egg white - From 2 eggs
  • Salt - needed
  • Oil - for deep frying
Method:
  • Clean the Chicken drumsticks and wash it with cold water and keep aside.
  • In a wide bowl, add all the above ingredients and sprinkle some water in masala powder to make it to an paste consistency.
  • Now put all the chicken drumsticks in masala bowl and mix it well.
  • Keep the chicken for max 1 hr undisturbed.
  • Heat oil in a pan and deep fry the chicken drumsticks , until the chicken turns golden brown in color. deep fry evenly on each sides.
  • Serve hot ,spicy, crispy chicken drumsticks with lemon, raita or biriyani.





Nethili Fish fry / Anchovies Fry

                        Here is an crispy and spicy fish fry for fish lover's. So crunchy fish you can serve for sambar and rasam rice. It would be an best combination.

Ingredients:
  • Anchovies fish - 250 grams
  • Red Chilli Powder - 2 tsp
  • Tumeric Powder - 1/4 tsp
  • Corn flour Powder - 1/2 tbsp
  • Ginger-garlic paste or juice - 1 tsp
  • Lemon juice - 1/2 tsp
  • Salt - needed
  • Oil - for deep frying
Method:
  • Clean the fish , remove head and wash it with cold water and keep aside.
  • In a wide bowl, add all the above ingredients and sprinkle some water in masala powder to make it to an paste consistency.
  • Now Apply the masala paste little by little in fish on both the sides and keep aside for min 30 - 45 min.
  • Heat oil in a pan and deep fry the fish , until the fish turns golden brown in color. deep fry evenly on both the sides.
  • Serve hot ,yummy, crispy fish fry with lemon or rice.
