Kalkandu Pongal / Sugar Candy Pongal
Sweet pongal is one of the most south-indian traditional sweet which is used to prepare often for each and every occasion. Thai thamizhar thirunaal pongal celeberation in villages and cities they used to prepare pongal for this celeberation. Ingredients:
- Raw rice - 1/2 cup
- Moong dal - 1/4 cup
- Kalkandu (Sugar candy) - 1/2 cup
- Boiled milk - 1/4 cup
- Water - 1 and 1/2 cups
- Ghee - 3 tbsp
- Cardamom - a pinch
- Raisins - as needed
- Cashew nuts - as needed
Method:
- Dry roast the moong dal for few mins until nice aroma rises and its is golden brown in color. Rinse the rice with water and keep aside
- In a pressure cook add rice along with roasted dal and add water and pressure cook for 3 whistle in low flame.
- Heat another heavy bottomed pan, add kalkandu (sugar candy) with water and allow it boil to get sugar syrup.
- Once the pressure releases , mash it well with a laddle till the rice is mashed up. Now, add the sugar syrup and milk together and mix well.
- Add the ghee and stir well for atleast 5 mins.(you can find the pongal leaves the sides of the pan).
- Atlast, add cardamom powder, dry roasted cashew nuts and raisins and mix well.
- Serve the hot kalkandu pongal.
