Kalkandu Pongal / Sugar Candy Pongal



                  Sweet pongal is one of the most south-indian traditional sweet which is used to prepare often for each and every occasion. Thai thamizhar thirunaal pongal celeberation in villages and cities they used to prepare pongal for this celeberation. Try different kinds of pongal and celebrate the joy of happiness with your family. 

Ingredients:
  • Raw rice - 1/2 cup
  • Moong dal - 1/4 cup
  • Kalkandu (Sugar candy) - 1/2 cup
  • Boiled milk - 1/4 cup
  • Water - 1 and 1/2 cups
  • Ghee - 3 tbsp
  • Cardamom - a pinch
  • Raisins - as needed
  • Cashew nuts - as needed
Method:
  • Dry roast the moong dal for few mins until nice aroma rises and its is golden brown in color. Rinse the rice with water and keep aside 
  • In a pressure cook add rice along with roasted dal and add water and pressure cook for 3 whistle in low flame.
  • Heat another heavy bottomed pan, add kalkandu (sugar candy) with water and allow it boil to get sugar syrup.  
  • Once the pressure releases , mash it well with a laddle till the rice is mashed up. Now, add the sugar syrup and milk together and mix well.
  • Add the ghee and stir well for atleast 5 mins.(you can find the pongal leaves the sides of the pan).
  • Atlast, add cardamom powder, dry roasted cashew nuts and raisins and mix well.
  • Serve the hot kalkandu pongal.

Crab Pepper Masala Dry

Crab Pepper Masala Dry



Ingredients:
  • Crab - 500 g
  • Onion - 3(Chopped)
  • Tomato - 1(Chopped)
  • Ginger-garlic paste - 1 tsp
  • Pepper power - 3 tsp
To marinate crab:
  • Chilly Powder - 2 tsp
  • Turmeric powder - 1/2 tsp
  • Salt - as needed
For seasoning:
  • Fennel seeds - 1/2 tsp
  • Cinnamon stick - 1 inch
  • Oil - as needed
  • Curry leaaves - few
  • Coriander leaves - few
Method:
  • For preparing crab pepper masala dry.  Cut the center part and legs seperately and clean well. Add the marinated ingredients and and keep aside.
  • Heat oil in a pan. add the fennel seeds and cinnamon stick , when it gets splutters add the ginger.garlic paste and onion saute it until onion become golden brown.
  • After few mins , add tomato and curry leaves saute it for 5 mins.
  • Now add the marinated crabs and saute it for 5mins. add some water for crabs to be cooked well. 
  • Close it with lid. Once the crabs are cooked well , add the pepper powder (You can add more pepper as per your taste).
  • Saute it until the crabs become dry and sprinkle some coriander leaves on top.
  • Serve the crab pepper masala dry.



















Prawn biriyani

Prawn Biriyani



                   Biriyani is one of the best non veg cuisine. I guess no one will hate biriyani whatever, may be either prawn , mutton or chicken. One of my very fav recipe, i love to cook and eat. It gives good aroma and very delicious to taste it. Prawn gives sweetness to biriyani. 

Ingredients:
  • Basmathi rice - 2 cup
  • Water - 3 cups
  • Onion - 4 no's (cut length wise)
  • Tomato - 2 no (chopped)
  • Green chilli - 3 no
  • Ginger & Garlic paste - 1 tbsp
  • Chilli Powder - 1 tsp
  • Turmeric Power - 1/4 tsp
  • Mint leaves - 1/2 cup
  • Cilantro/Coriander leaves - 1/4 cup
  • Lemon juice or Curd  - 1 tsp
  • Ghee - 1 tbsp
  • Oil - 2 tbsp.
  • Salt - 2 tbsp.
To Marinate Prawn:
  • Prawn - 750 g
  • Tumeric power - 1/4 tsp
  • Red Chilli powder - 1 tsp
  • Ginger- garlic paste - 1 tsp
  • Salt - to taste
Spices:
  • Bay leaves - 2 no
  • Cloves  - 2 no
  • Green cardamom - 2 no
  • Cinnamon stick - 2 inch
  • fennel seeds - 1 tsp
Methods:
  •  First remove the heads ,tails and center part of prawn and clean well. Drain the water, marinate and keep aside.
  • Soak the Basmathi rice in water for 20 mins .In that mean time proceed to the below procedure.
  • In a pressure cook , heat oil and add all the spices. Let them fry for few seconds.
  • When they crackle, Add the Onions and saute till it turns transparent.
  • Then , add ginger & garlic paste and saute it for 2mins.
  • Add green chillies, tomatoes, mint leaves, chilli powder , tumeric powder, salt and saute it for 5 mins.
  • Add the marinated prawn and suate it for another 5 mins.
  • Atlast, add the drained basmathi rice and saute it for 2 mins , then add 4 cups of hot water and lemon juice  . 
  • let them boil for 3mins (now taste the water, if needed add salt as per your taste) , mix well and cover the pressure cook with the lid and leave pressure cook for 2 whistle and 5min simmer. 
  • Open the pressure cook when the steam completely releases. mix it well without breaking the rice.
  • Serve hot with Raita and Eggplant curry/Bagara bainghan .

spicy dry prawn masala

Spicy Dry Prawm Masala



                                 I love this recipe with sambar rice and rasam rice awesome combination. try this recipe and serve for your loved ones.

Ingredients:

  • Prawn - 250g
  • Onion - 1 (Chopped)
  • tomato - 2 (Chopped)
  • Ginger-garlic paste - 2 tsp
  • chilly powder - 1 tbsp
  • Turmeric powder - 1/4 tsp
  • Garam masala - 1/2 tsp
  • Salt - as needed
For seasoning:

  • Mustard seeds - 1/2 tsp
  • Urad dal - 1/2 tsp
  • Oil - as needed
  • Curry leaaves - few
  • Coriander leaves - few
Method:
  • For preparing spicy dry prawn masala.  First remove the heads ,tails and center part of prawn and clean well. Drain the water and keep aside.
  • Heat oil in a pan. add the mustard seeds and urad dal , when it gets splutters add the ginger.garlic paste and onion saute it until onion become golden brown.
  • After few mins , add tomato saute it for 5 mins.
  • Now add the chilly powder, turmeric powder, garam masala and salt.
  • Next step add the prawns and saute it for 5mins. add some water for prawns to be cooked well.
  • Saute it until the prawns become dry and sprinkle some coriander leaves on top.
  • Serve the spicy dried prawn masala.


























Radish Egg burji / Mulangi Muttai Poriyal

Radish Egg burji / Mulangi Muttai Poriyal



                     Radish egg burji is an easy dish to prepare like scrambled egg. try and taste the sweetness of radish.

Ingredients needed :

  • Radish - 200 grams
  • Egg - 3 to 4
  • Onion - 1 (Finely chopped)
  • Chilly Powder - 1 tsp
  • Turmeric Powder - 1/4 tsp
  • Pepper Powder - 1 tsp
  • Green chilly - 3 (Finely Chopped)
  • Salt - As needed
  • Water - To sprinkle in radish

For Seasoning :

  • Oil - 2 tbsp
  • Mustard seeds - 1/2 tsp
  • Urad dal - 1/2 tsp
  • Curry leaves - few
  • Coriander leaves - few

Method:
  • Heat oil in a pan, add all the seasoning ingredients and allow it to splutter.
  • Add the chopped onions and saute it for 5 mins.
  • Now add the chopped radish , green chilly and saute it for another 5 mins.
  • Then add the turmeric powder, chilly powder ,salt ,sprinkle some water and close the pan with lid and allow it until radish to be cooked well.
  • Once the radish cooked , add the beaten egg to the mixture and mix well.
  • Keep stirring for few minutes and gently combine until eggs scrambled well.
  • Sprinkle pepper powder and serve hot.
